Two years ago, I discovered the magic of putting yogurt on toast. If you read that and have no desire to read any further, stick with me… I promise it will be worth it! So, back to me in my kitchen two years ago. It was February, everything was dark, and I needed more than anything to feel like it was summer and the sun was shining down on my face and the days were bright blue and sunny and everything was warm. For me, the quickest way to transport myself to summer in the middle of a dark winter is with citrus fruit! But how to make the moment extra special? Enter a creation I now refer to as ‘sunshine toast’, and it has become a staple of my winter breakfast repertoire. This is really a recipe without a recipe, so feel free to customize it however you want! As long as the basic components remain the same, your sunshine toast will be delicious (and will hopefully brighten up your winter, too!)
Note: For a visually striking toast, use blood oranges. For something extra special and floral, use Sumo oranges (my most favorite orange with a tragically short harvest season).

Ingredients:
- 2 slices sourdough bread, toasted to taste and cooled slightly
- Greek yogurt, stirred well until smooth
- 1 orange, peeled and sliced crosswise into thin discs
- Honey
- Bee pollen, optional
Directions:
- Using the back of a spoon, spread a thick layer of yogurt onto the toast.
- Arrange a few orange slices on top of each slice of toast.
- Drizzle honey and sprinkle a few pinches of bee pollen over orange slices.
- Enjoy!!
